Cookie Dough Bites

The past couple of weeks I have been busy so I have slacked off a little bit but here is a recipe that I really enjoy. My cousin has a food blog and I got this recipe from her and I love it.

Cookie Dough Bites

1/2 c. butter
3/4 c. packed brown sugar
2 1/4 c. flour
1 can (14 oz.) sweetened condensed milk
1 tsp. vanilla
1/2 c. choc chips (I add more)

Cream butter and sugar. Mix in remaining ingredients. Roll into bite sized balls. You can dip them in melted chocolate if you want. (I don't have the patience) :)

Guacamole

This is the recipe I use to make homemade guacamole. Everyone likes it... even my sister will eat it and she doesn't like avocados. I love avocados and this is another great way to have them.

Guacamole

2 large ripe avocados, peeled
1 cup sour cream
1 jalapeno pepper
4 teaspoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 large tomato
1/8 teaspoon pepper

Mix all ingredients in a blender or food processor.

Easy Fruit Dip

This is a super easy, quick, and delicious fruit dip. It's great for parties or just to eat at home. I really like it.

Easy Fruit Dip

1 large tub whipped topping
1 large box jell-o mix
chopped nuts (optional)
1 cup yogurt (optional)

Mix together all ingredients. Serve with fresh or frozen fruit. Store in refrigerator.

Honey Mustard Chicken

Yesterday I was watching Rachael Ray and it was "The Biggest Cooking Demo." She made this Honey Mustard Chicken. I had my friend over and so we made this for dinner. We added extra sauce and it was really good. It's an easy meal that we just served with rolls. If you are serving more than 4 people I would suggest making a double batch.

Honey Mustard Chicken

6 boneless skinless chicken breasts
1 or 2  peeled carrots (big carrots not baby)
2-3 c. celery (or any root vegetable)
1 onion
1 1/2 c. chicken stock
1 TBS Worcestershire sauce
1/4 c. Dijon mustard
1/3 c. honey

Preheat a large frying pan on med/high heat. Once preheated pour in just enough olive oil to cover bottom of pan. Cook the chicken on med/high heat. Once the chicken is cooked remove from pan and set aside. In the same pan you cooked the chicken in, add the vegetables and chicken stock. Let the vegetables soften. Add Worcestershire sauce, mustard, honey, and chicken.
 * I made some extra honey-mustard and spread it on the chicken.*
Let simmer for about 5 minutes and serve.

Rolled Buttercream Fondant

This is the recipe I use for my cake decorating. It is workable and by adding more or less powdered sugar you can change the consistency of it. It tastes pretty good too. You may want to add extra powdered sugar because it gets a little greasy.

Rolled Buttercream Fondant

1 c. light corn syrup
1 c. shortening
1/2 tsp salt
1 tsp vanilla
2 lbs confectioners sugar

In large bowl stir together shorening and syrup. Mix in salt and vanilla, then gradually mix in confectioners sugar until dough is stiff. Knead the dough and if too sticky add more confectioners sugar. Store in refridgerator in an airtight container.
To use, roll out on clean surface tha's been dusted with confectioner sugar until it is very thin (1/8 inch). Drape over frosted and chilled cakes and smooth the sides down, or cut into strips to make bows and other decorations. You can also mold it into any shape you can come up with. Have fun :)
