Goblin's Orange Popcorn

This is a recipe me and my friend found last night to make so we could "BOO" people :) Its easy and yummy! Hope you enjoy it. If you scroll down I have posted the "BOO" poem so you can do it yourself!

Goblin's Orange Popcorn

4 quarts popped popcorn
1/2 cup butter, cubed
1 cup sugar
6 TBS light corn syrup
dash salt
1 tsp vanilla
12 drops yellow food coloring
4 drops red food coloring

Put the popped popcorn in a very large bowl. In a saucepan combine butter, sugar, corn syrup, and salt. Bring to a boil. Add vanilla and food coloring. Reduce heat to med-low and cook for 5 minutes, stir occasionally. Spread on wax paper to dry.

Pumkin Pie Shake

Last week I had to run over to Vernal for an orthodontist appointment. For lunch my mom and I stopped by Sonic to get lunch. I got this Pumpkin Pie Shake. It was the best thing I have ever tasted... yep, it was that good. I tried to mimic it and it didn't worked out how I hoped, but it wasn't a complete fail. I put in 1/2 cup of pumpkin.. but it was too much for me. I would do 1/4 cup next time, it depends on how much pumpkin taste you want. Here's my recipe, but if you ever go to Sonic, I HIGHLY recommend the Pumpkin Pie Shake!

Pumpkin Pie Shake

Crumbs:
1 1/2 c crushed graham crackers
1/4 c melted butter
2 TBS brown sugar
Combine all ingredients.
Shake:
12 scoops vanilla ice cream
1-2 c milk, depending on how thick you want it
1 tsp nutmeg... (AHHH I forgot to add it)
1/4 c canned pumpkin
3/4-1 c crumbs
Whipped Topping (I made my own with whipping cream and sugar!)
Put all ingredients exept for whipped topping and some crumbs for the top in a blender. Mix until well blended. Pour into cups and top with whipped topping and crumbs. Makes about 4 servings.

Hawaiian Meatballs

This is another one of my aunts recipes. (Yes, I steal a lot of her recipes, but what can you do, there just that good). I was babysitting for my uncle and he has complained that we make dinner for his sister but not him, so I spent the day making bread and Alyssa came over and we made these for dinner for him. These are really sweet, so if you don't want them to be as sweet don't add as much pineapple or sugar.

Hawaiian Meatballs

2 lbs ground beef
1 1/2 c crushed cornflakes (or rice crispies)
2 eggs, beaten
2 TBS soy sauce
1 tsp garlic powder
1 tsp pepper
Mix with hands. Either cook on a skillet or in the oven @ 350 for 25-30 minutes.

SAUCE:
1 can pineapple, tidbits or crushed
1/2 c vinegar
1 TBS ketchup
2 TBS soy sauce
1 1/2 c brown sugar
3 TBS flour
2/3 c water
Heat water and brown sugar on stove top. Add the rest of the ingredients and heat. Pour sauce over meatballs and serve with rice.

Guacamole

This is the recipe I use to make homemade guacamole. Everyone likes it... even my sister will eat it and she doesn't like avocados. I love avocados and this is another great way to have them.

Guacamole

2 large ripe avocados, peeled
1 cup sour cream
1 jalapeno pepper
4 teaspoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 large tomato
1/8 teaspoon pepper

Mix all ingredients in a blender or food processor.

Easy Fruit Dip

This is a super easy, quick, and delicious fruit dip. It's great for parties or just to eat at home. I really like it.

Easy Fruit Dip

1 large tub whipped topping
1 large box jell-o mix
chopped nuts (optional)
1 cup yogurt (optional)

Mix together all ingredients. Serve with fresh or frozen fruit. Store in refrigerator.
