Cookie Dough Brownies

So for FHE in seminary I made these cookie dough brownies, this isn't my picture, but you get the idea :)

Cookie Dough Brownies
1 cup butter
2 cups sugar
4 eggs
1-1/2 tsp vanilla
1/2 cup cocoa
1-1/3 cups flour
1/2 tsp salt
Filling:
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup mini semi-sweet chocolate chips
Glaze:
2 cups milk chocolate chips
2 tablespoons shortening
3/4 cups walnuts, optional

Cream butter and sugar together. Add eggs and blend well. Add vanilla, salt, cocoa, and flour. Don’t over-beat. Pour into a greased 9×13 pan. Bake at 350 F for 20-25 minutes or until done. Cool completely. * I made them in a cookie sheet, like a sheet cake, still cook it about 20 minutes.
For filling, in a large bowl, cream butter and sugars until light & fluffy. Beat in milk and vanilla. Gradually beat in flour. Stir in mini chocolate chips. Spread over brownies (works best to just press out with clean hands.); chill until firm.
For glaze, in a microwave safe bowl, melt chocolate chips and shortening in 30 second intervals, stirring after each time, until smooth. Spread over filling. Immediately sprinkle with nuts, pressing down slightly.
Let Glaze harden before serving. Enjoy :)

Meal Deal One: Mexican Night!

So here is a really good recipe for chicken enchiladas. We served it with salad with some "special" mexican ranch. And an unusual mexican dessert. Enjoy!

Chicken Enchiladas W/Homemade Sauce
  • 1 lb chicken breast  , diced
  • 1 medium  onion , chopped
  • 1 tablespoon vegetable oil
  • 8 flour tortillas
  • 1 1/2 cups grated Cheese, divided
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 (15 ounce) can chicken broth
  • 1 cup sour cream
  • 1 (4 ounce) can chopped green chilies
Cook Chicken and onion together in oil over medium-high heat until chicken is just done. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
In frypan, cook chicken and onion together in oil over medium-high heat until chicken is just done. Divide cooked chicken evenly between 8 tortillas and ad 1 1/2 TBS cheese to each tortilla. Roll enchiladas and place seam-side down in 9x13 baking dish, lighly sprayed. Melt butter in saucepan; stir in flour to make roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently. Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas. Top with remaining cheese. (If making ahead you can double wrap and freeze at this point) Bake @ 400 for 20 minutes or until cheese is melted and sauce near edges is bubbly.

Sopapillas
2 Cups Flour
1 teaspoon baking powder
1/2 teaspoon salt
2 Tablespoons shortening
3/4 cup warm water
Oil for frying
1/4 cup sugar
2 Tablespoons cinnamon
  1. In a small bowl, combine sugar and cinnamon. Set aside.
  2. large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes.
  3. Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer or large dutch oven to 375 degrees F . Place dough into the hot oil, 2 at a time, and cook until golden brown on both sides, approximately 3 minutes.
  4. Drain on paper towels. Sprinkle both sides of each sopapilla with the cinnamon sugar mixture.
  5. Serve warm. If desired, break open and top with cool whip :)

Meal Deal

Hey Everyone! Just to let you know I have decided to add on to my blog. Alyssa and I enjoy coming up with new meals and making them for other people. So far we have made meals for our aunts, uncles, and grandparents. We actually started this little "tradition" of ours spring break last year. Here's how it goes. We call and make sure they are available that night. We come up with a new recipe we want to try, actually you get the whole meal, we make your main course, sides, AND dessert! So we make a list of possible ingredients, you can get them yourself, or even better, we will come with you to do the shopping. Then of course, we come to your house and prepare the meal. We serve it, eat with you, and even clean up after ourselves. Yep, dishes and all! We have so much fun doing this and have decided that we want to blog about it. So from now on we will blog all of the stuff we make, unless of course it is a secret recipe only we can make for you :) I'm thinking this will be lots of fun. So when we post one of our special meals it will go under the label "Meal Deal" so that you can find it easy. You are more than welcome to share this blog with your friends and family... The more the marrier!!

Cake Batter Pudding Cookies

I found this on pinterest too. They looked super delicious, so i made them. This picture isn't of the ones I made, but they are such cute little cookies and fun for holidays.

Cake Batter Pudding Cookies

  • 1 1/2 sticks (or 3/4 cup) butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 (3.4 oz) package instant vanilla pudding mix, dry
  • 3/4 cup yellow cake mix, dry
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2-1/4 cups flour
  • 1/2 tsp salt
  • sprinkles
Preheat oven to 350 F.
Stir together flour, salt and baking soda and set aside.
In a large bowl, cream butter and sugars together.
Add in pudding package and cake mix and beat until well blended.
Add eggs and vanilla and mix until smooth.
Add flour mixture slowly until well incorporated.
Mix in sprinkles sprinkles.
Roll into 1" balls and place on greased baking sheet.
Bake at 350 F for 10-12 minutes.
Don't overcook or they get hard.

Chocolate Chip Cup Cake

So this is also a recipe I found via pinterest. It is so incredibly easy and tastes like a masterpiece! It is the literal "cup" cake.


Chocolate Chip Cup Cake
1 egg
3 TBS brown sugar
1/3 cup flour
1 TBS butter
3 TBS mini Chocolate Chips
Add ingredients in that order and mix well. (other wise you will have scrambled eggs in your cake) Cook in the microwave for 2-3 minutes. Top with icecream and chocolate sauce.

Inception Cookies

I found this recipe on Pinterest.... ya, i'm kind of an addict :) They take longer than the average cookie, but thats because they are NOT your average cookie!!!!



Inception Cookies
2 sticks (1 cup) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 pkg. Oreo cookies
Preheat oven to 350 degrees.  Cream butter and sugars together with a mixer until well combined.  Beat in eggs and vanilla.
In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo cookie.  Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough.  Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack. Enjoy!!!
